The best time to see the famous Provence lavender fields is from late June to mid August. Although this does depend on where you go, the weather that year & when they harvest the lavender. There are also several lavender festivals throughout Provence in the summer months. They sell lavender ice creams, lavender honey and of course lavender products.
There are several places to go to see Provence lavender fields. I always go to Valensole as it's the closest place to where I live. Plus I know there are fields and fields of the beautiful purple flowers.
If you don't want to go to Valensole, you could also head towards Sault. Sault is in the Vaucluse department in the Provence-Alpes-Côte d'Azur region. Otherwise there is also Saint-Auban-sur-l'Ouvèze where Le Chatelard 1802 have their fields, factory & shop. It takes around 2 hours from Aix and 2.5 hours from Marseille. It doesn't seem that bad, but a lot of it is country roads which and winding up and down hills. I would say that it is the most stunning place & the views are spectacular, but just be wary if you get car sick.
Insider tip : another great place to see the lavender fields in a beautiful historical location is the Abbaye de Senanque which is next to the beautiful hilltop village of Gordes.
I particularly like the Provence lavender fields in Valensole as they can be quite quiet depending on what time of day you go. I love going in the afternoon/evening time when the sun is setting as the colours are beautiful, and there are no bus loads of tourists in the way of the photographs. Valensole also has a sunflower field situated just next to the lavender fields which makes for some beautiful photographs.
